About Eclipse

My Mission

I have had allergies my whole life. I know first hand how hard it can be, especially going out to eat. Allergy-friendly baked goods in the grocery store are usually mediocre at best, so I have learned to create my own. I have learned that baked goods without the allergens can be just as good and better then allergen filled ones. I want to help people find delicious treats to enjoy because no one should ever have to give up sweets because of allergies.

My Recipes

First of all, my recipes are DELICIOUS. They are all dairy, egg, and peanut-free, but most are free of other allergens as well. I use easy substitutes, so if butter (or a different substitute) is not a problem for you, feel free to use dairy butter instead of non-dairy (or whatever the allergen is in place of the substitute).

Behind The Bakery

I started the idea of Eclipse Bakery when I was about ten years old. In my neighborhood, we have an annual event called “Stands In the Hood”, where all the kids create a mini business for a day. I was so excited to have my own baking business for a day. I prepped day and night for my stand. I went way overboard but was able to raise a bucketload of money for my favorite charity, Pets of the Homeless (https://www.petsofthehomeless.org). I have participated in Stands in the Hood every year since, with the stands growing in size and profit every year.

That first year, I could not think of an amazing name, so I called my stand “Baked”. The next year, I realized that this would not work. My name had to be as great as my baked goods! In August of 2017, everyone was very excited over the total solar eclipse. I was still trying to figure out my name, and then it came to me, “Eclipse”. Eclipse means to surpass, and my recipes show that they can surpass the allergen filled versions!

The Stands In The Hood event was great every year. Except, when it was over I still was looking for a way to get out the message that allergy-friendly baked goods can be just as good or better as allergen filled foods. I started my instagram account and a neighborhood business (year round this time) to do just that. My business has helped spread the word and raise money for Pets of the Homeless.

Then, I was very excited at how Eclipse was going, but I knew that there was still work to do. Only people in my neighborhood and friends and family were trying my allergy-friendly sweets, so I knew that I had to reach out to more people. I created this blog, so everyone with or without allergies can have delicious desserts that are safe for almost everyone to eat.
